I for myself discovered Drive-by missiles as a way of dealing with bigger enemies I would else be stuck with. I made a ship with 3 or 4 missile bays, big engines and barely any defense to zoom by full speed and take out some weapons or pieces.

I could post pictures or the ship, if anyone takes interest.

Otherwise, to start a bounty hunter game, you can click on the small menu of the starting ship and load your own design. It must cost less than 80000. Personally I use this:
