There are currently two reasons why there aren't addition servers:
Servers cost me money to run, and since the game isn't making me any money yet, I'm trying to limit my expenses. (Though admittedly, the servers are quite cheap, only $5 USD / month.)
The number of people playing multiplayer isn't really high enough to warrant multiple servers. Adding multiple servers would split the existing player base and make it harder to find games.

Equalizer The connection to the server (and its location) shouldn't matter once a multiplayer game start.

This is actually not true. Currently the way the server works is that all network traffic between players gets routed through the server, meaning the closer you are to the server (Official US East is in New York), the better ping you'll get.
The reason I do it this way is to protect the identity of players' IP addresses, to prevent them from getting hacked or DDOS'ed. (It's also required for some players who are on especially restrictive routers/networks.) Though it does add considerable latency and I think most games don't bother with this, so I've been considering changing it to direct peer-to-peer, in which case you would be correct, distance from server wouldn't matter for most players (except when on such restrictive networks).
