The Backstabber Mini: It's not easy to beat a Cerberus with a Backstabber Mini... but it's possible.™

This design was inspired by the AI's tendency to attempt to rotate itself around a target ship, even though it is almost always impossible to do so because the target ship will simply rotate to face the attacking ship. The goal here was to add zillions of thrusters to find out if it actually is possible to rotate around another ship to attack it from the side. Conclusion: you can never actually attack a ship from the side if it is rotating to face you, but you probably can rotate 15 to 30 degrees off-center by ordering your ship to attack from the side, which is usually enough to avoid being hit by ion cannons and also the majority of bullet cannons.
My original design had front-facing cannons, but it turned out that often the cannons cannot fire because the bullets move too slowly and... um, it's hard to explain, but on the plus side the enemy ship will also be unable to fire its cannons.
The beginning of the battle is the trickiest part, because the AI thruster often doesn't put you on the ideal initial trajectory so the Cerberus might initially face you head-on. If you can survive that, you might just be able to slide to the left or right far enough to avoid the main guns and focus on destroying the smaller guns...
Note the large amount of forward thrusters. These are necessary to overcome the centrifugal force, and in fact they don't provide enough thrust unless you're quite close to the enemy ship.
